Description

Cubeb pepper has a mild black pepper heat accompanied by a delicate allspice note. The flavor is sometimes described as woody with hints of camphor. Some people detect nutmeg notes in its flavor profile.
It is used in a similar way to other spices in the same family of flavor profiles like black pepper, allspice, and cloves. This means that its main culinary use is as a seasoning for meats and vegetables. Cubeb peppers are used in a type of Indonesian curry called gulé. While modern chefs are finding ways to use the spice, there are no established applications for cubeb pepper in any of the European or American cuisines; however, it makes a decent substitute for both black pepper and allspice in almost all dishes that require them. It also shows up in some gins.
